Mom's Salsa

This Salsa was an everyday condiment on our table when I was growing up. Now I can't seem to ever make enough to satisfy my family, friends and just about anyone who try's it! The Recipe is actually pretty simple but it does require you to roast your chiles outside unless you have a very good ventilation system in your kitchen.
For Mom's Salsa you will need:
One 4 ounce package of dried chile de arbol or japanease dried chile.
One whole white onion, Diced
One can ( Large ) whole tomato's or diced if you prefer.
One bunch cilantro. Chop about half to start add more to taste.
2 Cloves garlic chopped.
1/2 teaspoon oregano.
salt and pepper to taste.
The secret to this great tasteing salsa is roasting the dried chiles in a cast iron skillet preferably on an outdoor barbacue or camping stove. Add the dried chiles to a hot and dry skillet and roast quickly . Remove from heat as they begin to blacken. (This will be a quick process). Be very careful not to inhale the fumes! Let chiles cool then place them in a ziplock bag. Crush the chiles as much as possible.
In a bowl mix all your ingredients except for the chile. if mixture seems too thick add water until you get the consistency you like.
Add 1 Tablespoon of dried roasted chile to start. salt and pepper to taste.
Add more of the dried roasted chile if you really like the heat!
