Microwave Ravioli

Summer is here, and sometimes that makes it difficult to want to slave in the kitchen. I use my microwave a great deal but use it even more in the summer. My family appreciates the excellent meals, and I appreciate not having to spend so much time in a hot kitchen. With this recipe, you won’t even have to turn your stove or oven on. Give it a try.

I use a Tupperware Rock N Serve large deep container for this recipe. If you can find a similar container, give it a try. Just remember that you only want to use microwave-safe containers for the microwave. Containers that are not microwave-safe can release unwanted chemicals into your food. Glass is usually a safe option if you don’t have the Rock N Serve container or something similar.

Ingredients 1 (16 oz) package of frozen Ravioli 1 qt jar of your favorite spaghetti sauce 1 small can of mushrooms 1/2 cup chopped bell peppers 2 cups of mozzarella cheese divided into 1 cup portions

Place all of the ingredients except for 1 cup of the cheese in your microwave container. Cover the container but try to leave a vent of some sort. This is why the Rock N Serve is good because it has a vent on it and that makes it easy for the steam to release while cooking.

Cook on high for 8 – 10 minutes or until the Ravioli is hot and tender. Stir. Top with remaining cheese. Microwave on high without a cover for 2 to 3 minutes or until the cheese is melted.

It will take less than thirty minutes to prepare dinner with this recipe. Even if it is a nice cool day it is an excellent recipe to use to make a quick dinner after a stressful day at work or running errands. Your family will love it and you will have some extra time to relax for the evening.

A recipe you can use the Ultimate Chopper to create!

Recipe: Warming Autumn Soup

1/2 pumpkin, cubed
1 carrot, sliced
2 sticks celery
(celeriac), sliced
1 onion, chopped
1 potato, chopped

4 cloves garlic (minced)
salt
freshly ground black pepper
2 tbsp olive oil
2 tbsp fresh coriander or chives, chopped
1-litre vegetable stock (2 pints)

Heat the olive oil in a saucepan and fry the pumpkin, carrot, celery, onion, and potato for 3-4 minutes. Add the garlic and fry for another 2 minutes. Add the stock, bring to the boil and simmer for 30 minutes or until vegetables are tender. Season to taste. Transfer to a blender or food processor and process until smooth. Serve with freshly chopped coriander or chives.

Serving Tip:
Serve the soup on Halloween – 31st October.

The vegetables can be altered depending on the ingredients available. This soup is an ideal way of using up left over vegetables. For example, the celery could be replaced by one leek.

Pumpkin and Butternut Squash – The pumpkin is a variety of squash and is cooked in the same way as butternut squash. To prepare; cut in half, scoop out the seeds, peel or scoop out the flesh. Cut into cubes and boil, braise or roast in the oven with a little olive oil sprinkled on top. If the butternut squash is not too big, simply cut it in half and place in a preheated oven, 450F, skin side up and bake for 1 hour.

Pumpkins are often associated with Halloween. They are hollowed out and cut to resemble faces. A candle is placed inside to light them up and they are then used as decorations or for trick or treating.

Eggs Are Healthful!

After years of bad press, new studies show that eggs have been giving a bum rap. If eggs are served without fatty sausage or bacon, no buttery toast, and cooked without fat, eggs are actually quite nutritious and safe. It’s easy to boil an egg, or”fry” in a non-stick pan with a cover and a spoon or so of water. Don’t rule out the toast. And even a small amount of butter or margarine can help prevent hunger between meals. But be very careful to avoid margarine made with hydrogenated oils or”trans fatty acids”.

Don’t make deviled eggs with mayonnaise, but try low-fat yogurt instead. Omelets made with eggs and tofu, no cheese, can be tasty. Boiled eggs, perhaps pickled in vinegar and salt water, can be a good meal or snack for warding off hunger.

Prepared intelligently, eggs are a great source of protein,vitamins, minerals, and can fight hunger better than sugarycereals or breakfast rolls.
